Poilâne Bakery: Behind the Scenes

A hearty loaf Apollonia Poilâne and her staff surprised us with for our wedding, in front of the original bakery location on rue du Cherche-Midi.

Some people say Poilâne’s bread is the best in the world. Martha Stewart calls their sourdough “perfect.” Dorie Greenspan refers to Poilâne as “bread royalty.”

From feeding a city to sparking an international bread movement, the Poilâne family is part of Paris history. And, under the leadership of Apollonia Poilâne, continues to rise as part of the city’s future.

We are honored to be one of the few allowed to bring guests behind the scenes of this legendary bakery to learn about the shop’s storied history in Paris’s iconic Saint-Germain neighborhood and the place of bread in French culture.

Start with a snack in the private office, beneath the bread chandelier famously made for Salvador Dalí. Next, a member of the Poilâne team will guide you through the 18th-century fournil, the underground baking room.

You’ll end your tour talking bread with Veronica over a filling tasting of the tartines that started the global trend, along with other bakery specials and wine.
